shes pink because pink is the color of fun, usually associated with playfulness or activity...
making us smile smile smile so that we know that nothing can overcome our happiness as long as we remain happy and true to our selves.

fun keeps our spirits high
and when our spirits are high we feel better and do better in life
pink... is a natural color to inspire us to do better and come forth with our human spirit to push forward

Both colours combined mean sun and food...
Its a play on the thanks giving idea where orange and gold represent friendship, truth, community and good tidings.
The same can be seen in her choice of dress, ranging in colours of gold brown and green..
Earthy tones that we associate with the desire to be at peace and have food
We see her as a giver of food and her colours depict an idea of earthy tones and a home style of peace..
Apple jack is appley because she actually represents our desire for home and peace
And she is jacky because calling somepony apple... Just does not make sense...
